liverpool: a chef's messy love affair with scouse and the rain

so here i am in liverpool, damp sleeves and all. checked the weather and it’s that damp chill that seeps into your bones, perfect for a stew. the locals call it scouse season for a reason. *albert dock is buzzing even in this drizzle, though honestly i’d trade the view for a proper kitchen. i heard this place called the catholic club serves scouse so authentic it’ll make your grandma weep - someone told me their recipe’s been locked in a safe since 1912. crazy, right? and if you’ve had enough of the city, manchester’s only a hop away. not that you’d leave - liverpool’s got this gritty charm that sticks to your boots.

spent yesterday trying to recreate that liverpool classic: scouse. diced lamb, carrots, onions, all stewed in a gravy that’s basically liquid comfort. failed miserably. turns out
salt beef from this butcher is non-negotiable. pro tip: skip the supermarket and hit the markets. got my salt beef from a stall where the guy looked like he’d fought a war with potatoes. worth every penny. also discovered this wild rumour that liverpool’s oldest pub actually serves stew made with rainwater. call me crazy but i’m testing that next week.

seriously though, the rain’s relentless. woke up to puddles that could swallow a cat. but that’s liverpool for you - damp, gritty, and full of flavor. tried to make
toad in the hole this morning. disaster. oven’s acting up. probably because of the humidity. word on the street is that maggie may’s does a mean version with proper yorkshires. might have to brave the downpour for that. also, someone warned me that sefton park* gets sketchy after dark. not that i’m going near there alone - i’ve seen enough horror movies.

anyway, off to hunt for salt beef. liverpool’s got this vibe where even the rain feels alive. if you’re a foodie, come prepared for damp clothes and full bellies. local food boards are surprisingly helpful for avoiding tourist traps. just avoid that place with the inflatable giant burger. heard it’s all hype. scouse, however? that’s the real deal. messy, honest, and sticks to your ribs like the rain sticks to your coat.

ps: if anyone knows where to get proper yorkshire puddles in this weather, hmu. my oven’s failing me.
